Ingredients:
  • 1.5 cups flour
  • 1 tsp baking soda
  • 1 cup (1/2 can) solid pack pumpkin
  • 1/3 cup vegetable oil (or applesauce)
  • 2 large eggs
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp cloves
  • 1/8 tsp ginger
  • 1/8 tsp allspice
  • 1.25 cups sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp sugar (for topping)
  • 1 tsp cinnamon (for topping)
Directions:
Preheat oven to 350F.

Mix together pumpkin puree, oil, eggs, seasonings (cinnamon, nutmeg, ginger, cloves, allspice), baking soda, salt in a large bowl until smooth. Mix in flour/baking powder.

Stir together remaining cinnamon and sugar for topping.

Divide into muffin cups and sprinkle tops with cinnamon/sugar mixture. Bake until puffed and golden - about 15 minutes for mini-muffins and 25-30 minutes for full size muffins.
Serves 36 mini-muffins or 12 normal muffins
